{"id":48311,"date":"2017-11-13T22:16:29","date_gmt":"2017-11-13T22:16:29","guid":{"rendered":"https:\/\/awellness.com\/?page_id=48311"},"modified":"2017-11-13T22:16:29","modified_gmt":"2017-11-13T22:16:29","slug":"healthy-choices-lentil-kale-soup-recipe","status":"publish","type":"page","link":"https:\/\/awellness.com\/index.php\/healthy-choices-lentil-kale-soup-recipe\/","title":{"rendered":"HEALTHY CHOICES: LENTIL &#038; KALE SOUP RECIPE"},"content":{"rendered":"<p>[et_pb_section fb_built=&#8221;1&#8243; _builder_version=&#8221;3.0.47&#8243;][et_pb_row _builder_version=&#8221;3.0.47&#8243; background_size=&#8221;initial&#8221; background_position=&#8221;top_left&#8221; background_repeat=&#8221;repeat&#8221;][et_pb_column type=&#8221;2_3&#8243; _builder_version=&#8221;3.0.47&#8243; parallax=&#8221;off&#8221; parallax_method=&#8221;on&#8221;][et_pb_blurb title=&#8221;HEALTHY CHOICES: LENTIL &#038; KALE SOUP RECIPE&#8221; _builder_version=&#8221;3.0.87&#8243; header_font=&#8221;|600|||||||&#8221;]<\/p>\n<p>Yield:  4-6 servings<\/p>\n<h4>INGREDIENTS:<\/h4>\n<ul>\n<li>1 Tablespoon extra virgin olive oil<\/li>\n<li>1 \u00bd cups peeled, diced onions<\/li>\n<li>2 cloves of garlic, crushed and chopped<\/li>\n<li>\u00bd cup diced celery (with leaves)<\/li>\n<li>1 cup diced carrots<\/li>\n<li>Ginger root 1&#8243; piece.<\/li>\n<li>\u00bc cup of organic chopped cilantro <\/li>\n<li>1 cup of lentils (can be red, green or the gray French) sorted and rinsed<\/li>\n<li>1 (3-inch) piece of Kombu* (good for lowering blood pressure and cholesterol.)<\/li>\n<li>6 cups water or vegetable stock<\/li>\n<li>\u00bd lemon, juiced and strained<\/li>\n<li> Sea salt black pepper to taste.   <\/li>\n<li>6 kale leaves, washed and torn by hand into small pieces<\/li>\n<\/ul>\n<h4>INSTRUCTIONS:<\/h4>\n<ul>\n<li>Warm the olive oil over medium heat in a heavy bottomed 3-5 quart soup pot.<\/li>\n<li>Add the onions and a pinch of salt and cook for 8 to 10 minutes, stirring occasionally.<\/li>\n<li>Add the garlic, celery, carrots, and cilantro and saut\u00e9 for 5 minutes.<\/li>\n<li>Sort through the lentils and discard any foreign matter.  Rinse briefly in a strainer under cold running water.<\/li>\n<li>Add the lentils, ginger, kombu,* and 6 cups of water to the soup pot and bring to a boil.<\/li>\n<li>Lower the heat, cover and simmer for 40 to 50 minutes or until the lentils are tender.<\/li>\n<li>Stir in the lemon juice and season with salt and pepper to taste.<\/li>\n<li>Stir in the kale.<\/li>\n<li>Simmer for 3 minutes.<\/li>\n<li>Serve garnished with scallion.\t\t\t\t\t\t\t<\/li>\n<\/ul>\n<p>*Good for lowering blood pressure and cholesterol.
