{"id":48315,"date":"2017-11-13T22:20:29","date_gmt":"2017-11-13T22:20:29","guid":{"rendered":"https:\/\/awellness.com\/?page_id=48315"},"modified":"2017-11-13T22:20:29","modified_gmt":"2017-11-13T22:20:29","slug":"healthy-choices-zucchini-spaghetti-recipe","status":"publish","type":"page","link":"https:\/\/awellness.com\/index.php\/healthy-choices-zucchini-spaghetti-recipe\/","title":{"rendered":"HEALTHY CHOICES: ZUCCHINI SPAGHETTI RECIPE"},"content":{"rendered":"<p>[et_pb_section fb_built=&#8221;1&#8243; _builder_version=&#8221;3.0.47&#8243;][et_pb_row _builder_version=&#8221;3.0.47&#8243; background_size=&#8221;initial&#8221; background_position=&#8221;top_left&#8221; background_repeat=&#8221;repeat&#8221;][et_pb_column type=&#8221;2_3&#8243; _builder_version=&#8221;3.0.47&#8243; parallax=&#8221;off&#8221; parallax_method=&#8221;on&#8221;][et_pb_blurb title=&#8221;HEALTHY CHOICES: ZUCCHINI SPAGHETTI RECIPE&#8221; _builder_version=&#8221;3.0.87&#8243; header_font=&#8221;|600|||||||&#8221;]<\/p>\n<p>Yields:  4 servings<\/p>\n<h4>INGREDIENTS:<\/h4>\n<ul style=\"margin-bottom: 0px;\">\n<li>3 medium zucchini, peeled<\/li>\n<li>1 small carrots, peeled<\/li>\n<li>1 green tomato<\/li>\n<li>A pinch of salt<\/li>\n<li>Enough cold water to cover vegetables in the bowl of your choice.<\/li>\n<li>1 teaspoon of lemon (fresh and strained)<\/li>\n<\/ul>\n<div style=\"margin: 10px 0 10px 25px;\"><u><strong>Pesto Sauce<\/strong>:<\/u><\/div>\n<ul style=\"margin-top: 0px;\">\n<li>2 cups of packed fresh organic basil leaves <\/li>\n<li>\u00bc  cup Extra Virgin Olive Oil<\/li>\n<li>2 tablespoons organic lemon juice (fresh, strained)<\/li>\n<li>1 tablespoon of room temperature water<\/li>\n<li>1 or 2 minced organic garlic clove(s)<\/li>\n<li>1 teaspoon Sea Salt <\/li>\n<li>1 pinch of fresh ground black pepper to taste.<\/li>\n<li>1 pinch of cayenne pepper<\/li>\n<li>\u00bd  cup of raw pine nuts (or cashews)\t\t\t<\/li>\n<\/ul>\n<h4>INSTRUCTIONS:<\/h4>\n<ul>\n<li>Using a vegetable peeler, peel and discard the outer layer of the vegetables.<\/li>\n<li>Using the vegetable peeler, peel the zucchini and carrot lengthwise into long, thin ribbons and stack.   Remove and do not use the seeds for this dish.<\/li>\n<li>With a sharp knife, cut each ribbon stack into strands to resemble spaghetti noodles.<\/li>\n<li>Place the &#8220;noodles&#8221; in a toss bowl, cover them with very cold water.<\/li>\n<li>Add a pinch of salt and a teaspoon of fresh lemon juice. Set bowl aside for about 6 minutes.<\/li>\n<li>Mince the basil.<\/li>\n<li>Add the liquid pesto sauce ingredients and blend about a minute.<\/li>\n<li>Add remaining pesto sauce ingredients and puree until achieve a smooth, but gritty consistency.
